The bamboo shoots, both cut and leftover, are selected as the main raw materials. After being thoroughly mixed and chopped, they undergo pre-cooking to soften the texture. Once softened, the mixture is beaten using a mechanical beater to break down the fibers and create a more uniform consistency. The next step involves stirring the mixture at a 1:1 ratio with water or another suitable liquid to ensure even distribution. After stirring, the mixture is transferred into a concentration tank where it is heated and reduced to concentrate the flavors and achieve the desired thickness. At this stage, a measured amount of agar is added to help set the sauce. When the refractive index reaches 60%, which indicates the right level of concentration, a small quantity of citric acid is introduced to adjust the pH and enhance the flavor of the asparagus sauce. Once the mixture is properly balanced in terms of texture, taste, and acidity, it is then bottled, sealed, and subjected to sterilization to ensure long-term shelf stability. This process not only preserves the quality of the product but also extends its storage life, making it convenient for consumers to enjoy at any time.
