Cold-pressed rice flour is a type of rice noodle made by pressing rice without steaming. This method involves crushing the rice and then pressing it at low temperatures to maintain its natural texture and flavor. The production process includes several key steps:
1. **Main Equipment**: The primary tools used are a hammer crusher and a cold-press rice noodle machine.
2. **Process Flow**:
Rice → Soaking → Washing → Draining → Pressing → Wet Noodles → Sun Drying → Packaging → Finished Product
3. **Operation Method**:
- **Soaking**: Selected early or late rice is placed in a rice pool, covered with water about 20 cm above the rice, and soaked for approximately 2 hours. Prolonged soaking increases the moisture content, making the rice harder to process.
- **Washing**: After soaking, the rice is transferred to a washing tank where it is cleaned and sanded. Once washed, the rice is placed into a rice bowl to ensure even water absorption and to remove excess moisture.
- **Crushing**: The moistened rice is crushed using a hammer mill until it reaches a fineness of 60 mesh.
- **Pressing**: The crushed rice powder, which has a moisture content of 30–32%, is fed into the press. Initially, the rice noodles may not be fully cooked due to the cold pressing process, resulting in lower transparency. However, as the pressing continues, the temperature rises, increasing the viscosity of the dough. To prevent the noodles from sticking together, a blower is used to cool them during pressing. The screw speed of the press is set to 750 rpm, and the internal temperature should not drop below 140°C. The pressed noodles are cut into sections of about 1 meter.
- **Sun Drying**: The freshly pressed noodles are dried outdoors on bamboo racks to reduce moisture content further.
- **Packaging**: Once dried, the noodles are cut into portions of about 25 cm and packaged for storage or sale.
This traditional method preserves the natural properties of rice while producing a unique texture that sets cold-pressed rice flour apart from other types of rice noodles. It’s a simple yet effective technique that highlights the quality of the raw ingredients and the care taken in the production process.
