After being combined with the golden baby starter and additional ingredients, the fermented material is now ready to enter the standard fermentation phase. During the summer, it's important to ensure good air circulation. If the temperature rises too high, you can lightly sprinkle water to cool it down. In winter, the material should be kept at a minimum starting temperature of around 15°C to support effective fermentation. Within 48 hours, the temperature of the materials usually rises above 50–60°C, which signals that the stacking process can begin. Once the pile is turned, the temperature tends to increase even more rapidly. If the core temperature exceeds 65°C, it’s time to turn the pile again. It’s essential to swap the inner and outer layers during each turning to ensure even fermentation throughout the pile. If the pile becomes too compact and lacks airflow, you can make small holes in it to improve oxygen flow. After 3 to 4 turnings, the original fecal odor should disappear, and a mild ammonia scent along with a pleasant fermentation aroma will develop. At this stage, the pile should be full of white fungal growth, which is a clear sign that the fermentation process has been successful.
