**2.1 Chestnut Pretreatment**
Freshly harvested chestnuts have high moisture and low soluble sugar levels, making them tough and hard to peel. To improve flavor and texture, they are left in a well-ventilated area, stacked at 4–5 cm thick, and turned 2–3 times daily for 4–5 days. This process helps convert some starch into sugar and reduces moisture, enhancing taste and quality.

After washing with clean water to remove impurities, chestnuts are sorted based on size and shape to ensure uniformity in the final product.

A seasoning liquid is prepared using star anise (80g), cinnamon (50g), cloves (15g), pepper (15g), licorice (20g), salt (400g), sugar (250g), and 10 liters of water. The chestnuts and seasoning are placed in a glass desiccator, sealed with a rubber stopper, and connected to a vacuum pump via a three-way piston. Flexible composite films made of extended polypropylene and polyethylene or polypropylene with a vinylidene chloride coating are recommended.
